DIY Subway cookies!


In Australia subway cookies are known for their soft delicious texture, I love cookies when they are soft and freshly baked. As you can see above I went for m&m’s topping but you can top with whatever you like!

This recipe serves approx. 20, depending on your cookie size.

Ingredients:

  • 2 cups (250g) self-raising flour

  • 170g butter, melted

  • 1 cup (185g) brown sugar, firmly packed

  • ½ cup (110g) white sugar

  • 1 tablespoon vanilla essence

  • 1 egg

  • 1 egg yolk

  • 1 cup m&m’s (or favourite cookie topping)

Directions:

  1. Preheat the oven to 170 degrees celcius. Line cookie tray with baking paper (I used foil, still works!)

  2. In a bowl, mix together the melted butter, brown sugar and white sugar. Beat in the vanilla, egg, and egg yolk.

  3. Add in flour and mix well, using your hands really helps!

  4. Optional: Stir in the m&m’s (or topping of choosing) I like to leave this step for later and only have the toppings on top but it’s up to you.

  5. Roll tablespoons of the dough into spheres and place on the tray, leaving plenty of room for spreading.

  6. Bake for 15 minutes or until they start to go golden brown around the edges. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely

  7. Enjoy!
